15 Easy Dinners for Two
I'm always on the lookout for easy weeknight dinners for two! Since it's just me and my husband, I'm afraid to make too much food since we very rarely eat left overs (I know, I know... we totally should). But, I found the following 15 easy dinners for two and wanted to share them!
Guinness Shepherd's Pie
This dish is so flavorful and a hearty meat and potato meal. It uses ground beef, onion, garlic, worcester sauce, a ½ C of beer, thyme, tomato sauce and frozen mixed vegetables. All of this is sauted in a pan while the potatoes are cooking. Add broth and thicken the meat mixture by simmering. The final step is to spoon the mixture into 2 oven proof dishes, top with mashed potatoes and cheese and bake until golden brown on top. This is a hearty meal for two created by Chocolate Moosey.
Homemade Salisbury Steak
An easy one pan meal with onions and potatoes is great in my book. The onions and red potatoes are sliced and coated in oil, salt and pepper and placed on the baking sheet. The hamburger, worchester sauce, onion powder and garlic are mixed up in a bowl and then made into mini meatloaf size and placed on top of the onions and potatoes. Easy 20 Minute Teriyaki Chicken and Broccoli
A recipe that uses fresh or frozen broccoli and chicken but turns out delicious is exactly what I look for in a meal.The sauce is what brings it all together with low sodium soy sauce, brown sugar, garlic, rice vinegar, water and cornstarch as your thickener. An introduction to the zucchini noodle could not get any better than this recipe. The bacon crumbles with the cheesy zucchini noodles has a great flavor with the red pepper flakes giving it a bit of a kick. There is nothing bland in this dinner and with the right spiral tool the noodles are easy to make. It is important to use enough fresh garlic and then the cheese is a creamy blend. Speedy Sage and Sausage Pasta
A good chorizo sausage with sage and pasta sounds delicious already and all the other ingredients have not been added yet. I love a good chorizo sausage and have been able to find one at my nearby butchers. I use that in this recipe and crumble it up. It also uses penne pasta. Lasagna for Two
I love lasagna but I always make too much and it goes to waste. This is a perfect amount for two and the seasoning is perfect. So I now use this recipe even when I make a big pan for family. Seasoned ground beef with onion, fresh garlic, oregano, basil and cloves provides a great flavor. Then use your favorite marinara sauce, ricotta cheese, 6 noodles, parmesan cheese and mozzarella and it is the perfect layered bake for two.Add a salad or garlic bread and you have a complete hot meal. Loaded Chicken and Potato Casserole
I love easy one pan dishes and this is tasty. If you like spicy then use the full amount of hot sauce if you prefer more mild then cut back. This has 1lb of cut up chicken, red potatoes cut up, The chicken and potatoes are tossed in a bowl with olive oil, paprika, garlic powder and desired amount of hot sauce. A recipe that starts out making a butternut hash with bacon is a way to my heart healthy bones. I know I don't need the bacon but i use turkey bacon. The hash consists of butter, butternut squash, thyme, onion and salt and salt and pepper to taste. I always double this recipe because i like it with other things. Creamy Greek Pasta Salad
I like a pasta salad every now and then for dinner but even more when I have this greek dressing on hand. It is made from greek yogurt, lemon juice, garlic, dill and oregano. Then I use wheat pasta, cucumbers, tomatoes, red onion and black olives. Cool the pasta and then mix all ingredients together and add dressing and top with feta cheese. Chicken Parmesan Casserole
You will need about 1.2 lbs of cooked chicken. If you have leftover baked chicken you can use that. The chicken goes in a casserole dish, add marinara sauce, sprinkle with parmesan cheese and mozzarella cheese, mix panko bread crumbs with oil and sprinkle over top. Pesto Chicken Pasta for Two
Easy enough to cut up garlic, slice cherry tomatoes and chicken up all on the same cutting board. Roast the tomatoes in olive oil and salt and pepper. You can do the roasting while your pasta is cooking. Simmer sauce with pesto, garlic and half and half. Mix all the ingredients together. This easy 20 minute dinner is healthy and full of flavor. I love a recipe that is stuffed with one of my favorite dips, Spinach and artichoke. This recipe stuffs chicken recipes with the dip and then cooks them on the stove. Sheet Pan Chicken Fajitas
The one sheet pan meals are super easy but taste delicious. I cut up chicken breast into strips, then green, yellow and red peppers and red onion. Put all of it in a bowl and coat with a mix of chili powder, garlic powder, cumin, paprika and onion powder with a little oil.Roasted it all in the oven and serve in warm tortillas with some grated cheese, avocado, tomatoes and sour cream if desired.
